Beans and legumes are packed with nutrients — like protein, fiber, complex carbohydrates, folate, magnesium, iron, manganese, selenium, potassium, calcium, copper, zinc, antioxidants and a wide array of other phytonutrients (nutrients found in plant foods that can support optimal health).
Another term you may see is "pulses." These are the edible seeds of legumes — lentils, peas and chick peas. They are very similar nutritionally to beans and can be used in some of the same recipes. They tend to have shorter cooking times and the dried forms may not need soaking.
